Rhubarb Fool

Baked in its own juice while retaining its beautiful colour, this rhubarb fool is a real treat. It’s very rich in flavour and you’ll only need a small portion to be amazed.

  • 500g rhubarb
  • water
  • 150g caster sugar
  • Juice of 1 orange
  • 100ml crème fraîche
  • 1 egg white (beaten until peaked)

Chop the rhubarb into small pieces and place it in the medium pan together with caster sugar and orange juice. Add just enough water to cover rhubarb and boil rapidly until soft.

In a bowl, fold the egg white into whipped crème fraîche, add soft rhubarb into mixture.

Spoon the mixture into dessert glasses and decorate with a piece of rhubarb on top.
